Description
A delicious and unique veal roast that is perfectly tender and flavorful thanks to a salt crust and rich ghee butter.
Ingredients

- 1 veal roast
- 2 cups kosher salt
- 1/4 cup ghee
- 2 sprigs of rosemary
- 4 cloves of garlic
- 1 tablespoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix kosher salt with enough water to create a paste.
- Coat the veal roast with the salt mixture and place it in a roasting pan.
- Add rosemary and garlic around the roast.
- Bake in the preheated oven for about 2 hours or until desired doneness.
- Once cooked, let it rest before removing the salt crust.
- Serve with melted ghee on top.
Notes
- Allow the roast to rest for at least 30 minutes before carving.
- Experiment with different herbs mixed into the salt crust for additional flavor.
