Description

A delicious and unique veal roast that is perfectly tender and flavorful thanks to a salt crust and rich ghee butter.


Ingredients

Scale
  • 1 veal roast
  • 2 cups kosher salt
  • 1/4 cup ghee
  • 2 sprigs of rosemary
  • 4 cloves of garlic
  • 1 tablespoon black pepper


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix kosher salt with enough water to create a paste.
  3. Coat the veal roast with the salt mixture and place it in a roasting pan.
  4. Add rosemary and garlic around the roast.
  5. Bake in the preheated oven for about 2 hours or until desired doneness.
  6. Once cooked, let it rest before removing the salt crust.
  7. Serve with melted ghee on top.

Notes

  • Allow the roast to rest for at least 30 minutes before carving.
  • Experiment with different herbs mixed into the salt crust for additional flavor.
