Ingredients

- 4 salmon fillets
- 1 pound baby potatoes
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a bowl, mix olive oil, thyme, rosemary, garlic powder, salt, and pepper.
- Add the potatoes and toss until coated.
- Spread the potatoes on a baking sheet and bake for 20 minutes.
- Season the salmon fillets with salt and pepper.
- After 20 minutes, remove the potatoes from the oven and place the salmon fillets on the baking sheet.
- Bake for an additional 15-20 minutes until the salmon is cooked through and the potatoes are tender.
- Serve hot.
Notes
- For extra flavor, marinate salmon in lemon juice for 30 minutes before cooking.
- Feel free to add seasonal vegetables for a more complete meal.
