Description

A delicious and healthy meal combining flavorful salmon with herbed potatoes.


Ingredients

  • 4 salmon fillets
  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a bowl, mix olive oil, thyme, rosemary, garlic powder, salt, and pepper.
  4. Add the potatoes and toss until coated.
  5. Spread the potatoes on a baking sheet and bake for 20 minutes.
  6. Season the salmon fillets with salt and pepper.
  7. After 20 minutes, remove the potatoes from the oven and place the salmon fillets on the baking sheet.
  8. Bake for an additional 15-20 minutes until the salmon is cooked through and the potatoes are tender.
  9. Serve hot.

  • For extra flavor, marinate salmon in lemon juice for 30 minutes before cooking.
