Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 2 cups diced onions
  • 4 cloves garlic, minced
  • 3 cups carrots, sliced
  • 2 cups mushrooms, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup red wine
  • 2 cups beef broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Heat olive oil in a large pot over medium-high heat and brown the beef cubes.
  3. Add onions and garlic, and sauté until soft.
  4. Stir in the carrots and mushrooms.
  5. Add the diced tomatoes, red wine, beef broth, basil, thyme, salt, and pepper.
  6. Bring to a simmer, then cover and transfer to the oven.
  7. Bake for 2 to 2.5 hours, until the beef is tender.
  8. Sprinkle with fresh parsley before serving.
