- 2 pounds beef chuck, cut into cubes
- 1 tablespoon olive oil
- 2 cups diced onions
- 4 cloves garlic, minced
- 3 cups carrots, sliced
- 2 cups mushrooms, sliced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup red wine
- 2 cups beef broth
- 2 teaspoons dried basil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 325°F (160°C).
- Heat olive oil in a large pot over medium-high heat and brown the beef cubes.
- Add onions and garlic, and sauté until soft.
- Stir in the carrots and mushrooms.
- Add the diced tomatoes, red wine, beef broth, basil, thyme, salt, and pepper.
- Bring to a simmer, then cover and transfer to the oven.
- Bake for 2 to 2.5 hours, until the beef is tender.
- Sprinkle with fresh parsley before serving.
Notes
