- 1 tbsp vegetable oil
- 1 onion, chopped
- 1 carrot, grated
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 3 cups beef or chicken stock
- 2 cups assorted meats (ham, sausage, etc.) diced
- 1 cup pickled cucumbers, diced
- 2 tbsp tomato paste
- 1 tbsp capers
- 1 tsp smoked paprika
- 1 lemon, juiced
- 1 bay leaf
- to taste salt and pepper
- 1/4 cup sour cream (for serving)
- 1/4 cup fresh dill (for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat and sauté the onion and carrot until softened.
- Add garlic and bell pepper, cooking for another 2 minutes.
- Stir in the assorted meats, cooking until browned.
- Add the stock, pickled cucumbers, tomato paste, capers, smoked paprika, lemon juice, and bay leaf, and bring to a boil.
- Reduce heat and let simmer for 30 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Remove the bay leaf before serving.
- Serve hot, topped with a dollop of sour cream and garnished with fresh dill.
