Description

Russian Solyanka Soup is a hearty and sour soup that combines various meats, vegetables, and pickled ingredients, creating a unique and flavorful dish traditionally served in Russia.


Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 carrot, grated
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 3 cups beef or chicken stock
  • 2 cups assorted meats (ham, sausage, etc.) diced
  • 1 cup pickled cucumbers, diced
  • 2 tbsp tomato paste
  • 1 tbsp capers
  • 1 tsp smoked paprika
  • 1 lemon, juiced
  • 1 bay leaf
  • to taste salt and pepper
  • 1/4 cup sour cream (for serving)
  • 1/4 cup fresh dill (for garnish)


Instructions

  1. In a large pot, heat the vegetable oil over medium heat and sauté the onion and carrot until softened.
  2. Add garlic and bell pepper, cooking for another 2 minutes.
  3. Stir in the assorted meats, cooking until browned.
  4. Add the stock, pickled cucumbers, tomato paste, capers, smoked paprika, lemon juice, and bay leaf, and bring to a boil.
  5. Reduce heat and let simmer for 30 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaf before serving.
  8. Serve hot, topped with a dollop of sour cream and garnished with fresh dill.
