Ingredients

  • 2 pounds lamb shoulder
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 cup mint leaves

  • 1 cup water
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the smoker to 225°F.
  2. Rub the lamb shoulder with olive oil, rosemary, salt, and pepper.
  3. Place the lamb in the smoker and smoke for 4 hours.
  4. Prepare the mint gel by blending mint leaves, water, and lemon juice until smooth.
  5. Strain the mint mixture to remove solids.
  6. Serve the smoked lamb with a drizzle of mint gel.
