- 2 lobster tails
- 4 cups lobster stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1/4 cup dry white wine
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté onions, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Pour in white wine and reduce by half.
- Add tomato paste, thyme, and paprika, stirring to combine.
- Add lobster stock and bring to a simmer.
- Add lobster tails and cook until the meat is tender.
- Remove lobster tails, let cool, then chop the meat into bite-sized pieces.
- Stir in heavy cream and season with salt and pepper.
- Add chopped lobster meat back to the pot and heat through.
- Serve hot, garnished with fresh herbs if desired.
