Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the duck fat with the chopped herbs, salt, and black pepper.
- Rub the mixture all over the quail, ensuring they are well coated.
- Place the quail on a roasting pan.
- Roast in the oven for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove from the oven and let rest for 5 minutes before serving.
