Ingredients

  • 4 tablespoons duck fat
  • 1 tablespoon fresh thyme, chopped

  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the duck fat with the chopped herbs, salt, and black pepper.
  3. Rub the mixture all over the quail, ensuring they are well coated.
  4. Place the quail on a roasting pan.
  5. Roast in the oven for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Remove from the oven and let rest for 5 minutes before serving.
