- 1 teaspoon smoked Maldon salt
- 1 tablespoon olive oil

Instructions
- Preheat your oven to 450°F (232°C).
- Place the bone marrow upright on a baking sheet.
- Drizzle with olive oil and sprinkle with smoked Maldon salt.
- Roast in the oven for about 20 minutes, or until the marrow is bubbly and slightly browned.
- Remove from the oven and allow to cool slightly before serving.
- Scoop the marrow onto toasted bread and garnish with fresh herbs.
