Description

Ingredients

  • 1 pheasant, cleaned and prepared
  • 10 slices bacon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 2 sprigs fresh rosemary
  • 1 onion, quartered
  • 4 cloves garlic, crushed


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pheasant with salt and pepper.
  3. Wrap the pheasant in bacon slices, securing them with toothpicks if necessary.
  4. In a large oven-safe skillet, heat olive oil over medium heat and brown the wrapped pheasant on all sides.
  5. Add chicken broth, onion, garlic, and rosemary to the skillet.
  6. Transfer the skillet to the preheated oven and roast for 45-60 minutes, or until the pheasant reaches an internal temperature of 165°F (74°C).
  7. Let rest before carving and serving.
