Description
A hearty and comforting braised beef roast made with Guinness beer for a rich flavor.
Ingredients

- 4 pounds beef roast
- 2 cups Guinness beer
- 1 tablespoon vegetable oil
- 2 onions, chopped
- 3 carrots, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon brown sugar
- 2 tablespoons soy sauce
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
Instructions
- Preheat oven to 325°F (163°C).
- In a large Dutch oven, heat vegetable oil over medium-high heat. Sear the beef roast on all sides until browned.
- Remove the roast and set aside. Add onions and carrots to the pot and sauté until softened.
- Add garlic and sauté for an additional minute.
- Stir in Guinness beer, beef broth, tomato paste, brown sugar, soy sauce, thyme, salt, pepper, and bay leaves.
- Return the roast to the pot. Cover and transfer to the oven.
- Braise for 3 hours, or until the beef is tender.
- Remove from oven and let rest before slicing.
Notes
- This dish pairs well with mashed potatoes or crusty bread.
- Leftovers can be stored in the refrigerator for up to 3 days.
