Description

A hearty and comforting braised beef roast made with Guinness beer for a rich flavor.


Ingredients

  • 4 pounds beef roast
  • 2 cups Guinness beer
  • 1 tablespoon vegetable oil
  • 2 onions, chopped
  • 3 carrots, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves


Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a large Dutch oven, heat vegetable oil over medium-high heat. Sear the beef roast on all sides until browned.
  3. Remove the roast and set aside. Add onions and carrots to the pot and sauté until softened.
  4. Add garlic and sauté for an additional minute.
  5. Stir in Guinness beer, beef broth, tomato paste, brown sugar, soy sauce, thyme, salt, pepper, and bay leaves.
  6. Return the roast to the pot. Cover and transfer to the oven.
  7. Braise for 3 hours, or until the beef is tender.
  8. Remove from oven and let rest before slicing.

  • This dish pairs well with mashed potatoes or crusty bread.
  • Leftovers can be stored in the refrigerator for up to 3 days.
