Description

A rich and flavorful brisket recipe glazed with a savory red wine and gelatin jus.


Ingredients

Scale
  • 4 pounds brisket
  • 2 cups red wine
  • 2 tablespoons gelatin
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large oven-safe pot, heat olive oil over medium heat. Season brisket with salt and pepper, then sear on all sides until browned.
  3. Remove brisket and set aside. In the same pot, add onions and garlic, sauté until translucent.
  4. Pour in red wine and scrape up any browned bits from the bottom. Bring to a boil.
  5. Stir in beef broth, thyme, and rosemary; return brisket to pot.
  6. Cover pot and transfer to oven. Cook for 3-4 hours, or until brisket is tender.
  7. Remove brisket from the pot and rest for 20 minutes before slicing.
  8. Meanwhile, strain the cooking liquid and return to saucepan.
  9. Sprinkle gelatin over the liquid and heat until dissolved, stirring to combine.
  10. Pour gelatin jus over sliced brisket and serve.

Notes

  • For extra flavor, marinate the brisket overnight in red wine.
  • Best served with mashed potatoes or crusty bread.
