A rich and flavorful brisket recipe glazed with a savory red wine and gelatin jus.

- 4 pounds brisket
- 2 cups red wine
- 2 tablespoons gelatin
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups beef broth
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 300°F (150°C).
- In a large oven-safe pot, heat olive oil over medium heat. Season brisket with salt and pepper, then sear on all sides until browned.
- Remove brisket and set aside. In the same pot, add onions and garlic, sauté until translucent.
- Pour in red wine and scrape up any browned bits from the bottom. Bring to a boil.
- Stir in beef broth, thyme, and rosemary; return brisket to pot.
- Cover pot and transfer to oven. Cook for 3-4 hours, or until brisket is tender.
- Remove brisket from the pot and rest for 20 minutes before slicing.
- Meanwhile, strain the cooking liquid and return to saucepan.
- Sprinkle gelatin over the liquid and heat until dissolved, stirring to combine.
- Pour gelatin jus over sliced brisket and serve.
Notes
- For extra flavor, marinate the brisket overnight in red wine.
- Best served with mashed potatoes or crusty bread.
