Ingredients

  • 4 pounds brisket
  • 2 cups red wine
  • 1 cup beef broth
  • 2 tablespoons gelatin
  • 1 onion, diced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large pot, heat olive oil over medium heat. Sear the brisket on both sides until browned.
  3. Add onions, carrots, and celery; sauté until softened.
  4. Add garlic and cook for an additional minute.
  5. Pour in red wine and beef broth; bring to a simmer.
  6. Sprinkle the gelatin over the liquid and stir to dissolve.
  7. Add thyme, rosemary, salt, and pepper.
  8. Cover and transfer the pot to the oven; cook for about 3 hours or until the brisket is tender.
  9. Remove from oven and let rest before slicing.

Notes

  • For a deeper flavor, marinate the brisket in red wine overnight.
  • Serve with mashed potatoes or crusty bread.
