Ingredients

  • 4 pounds brisket
  • 2 cups red wine
  • 1 cup beef stock
  • 2 tablespoons gelatin
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until softened.
  3. Season brisket with salt, pepper, and thyme, then sear in the pot until browned on both sides.
  4. Pour in the red wine and beef stock, bring to a boil.
  5. Remove from heat and sprinkle gelatin over the liquid, stirring to dissolve.
  6. Cover the pot and transfer to the oven. Cook for 3-4 hours or until tender.
  7. Remove brisket and let rest before slicing. Strain the sauce and serve over the brisket.
