- 2 cups red wine
- 1 cup beef stock
- 2 tablespoons gelatin
- 2 onions, chopped

- 1 tablespoon olive oil
Instructions
- Preheat the oven to 300°F (150°C).
- Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until softened.
- Season brisket with salt, pepper, and thyme, then sear in the pot until browned on both sides.
- Pour in the red wine and beef stock, bring to a boil.
- Remove from heat and sprinkle gelatin over the liquid, stirring to dissolve.
- Cover the pot and transfer to the oven. Cook for 3-4 hours or until tender.
- Remove brisket and let rest before slicing. Strain the sauce and serve over the brisket.
