Description

A flavorful dish featuring tender venison braised in red wine with the aromatic addition of juniper berries.


Ingredients

  • 2 pounds venison, cut into chunks
  • 1 bottle red wine
  • 2 cups beef stock
  • 1 tablespoon juniper berries
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add the venison and brown on all sides.
  3. Remove venison and set aside.
  4. Add onion, carrots, celery, and garlic to the pot, sautéing until soft.
  5. Return venison to the pot, then add red wine, beef stock, juniper berries, thyme, and bay leaves.
  6. Bring to a simmer, cover, and reduce heat. Cook for about 2 hours or until venison is tender.
  7. Season with salt and pepper to taste before serving.
