- 2 pounds venison, cut into chunks
- 1 bottle red wine
- 2 cups beef stock
- 1 tablespoon juniper berries
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add the venison and brown on all sides.
- Remove venison and set aside.
- Add onion, carrots, celery, and garlic to the pot, sautéing until soft.
- Return venison to the pot, then add red wine, beef stock, juniper berries, thyme, and bay leaves.
- Bring to a simmer, cover, and reduce heat. Cook for about 2 hours or until venison is tender.
- Season with salt and pepper to taste before serving.

- Great served with mashed potatoes or crusty bread.
- Consider marinating the venison overnight for enhanced flavor.
