- 2 racks of lamb
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 300°F (150°C).
- Season the racks of lamb with garlic, rosemary, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the lamb on all sides.
- Transfer to a roasting pan and roast for about 1.5 to 2 hours until the internal temperature reaches desired doneness.
- Remove from oven, let rest for 15 minutes, then slice and serve.

- For more flavor, marinate the lamb overnight.
- Serve with roasted vegetables or a fresh salad.
