A rich and flavorful spread made from rabbit, perfect for pairing with crusty bread.
Ingredients

- 1 rabbit cut into pieces
- 2 cups duck fat
- 1 cup onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 bay leaves
- 1 tablespoon Cognac or brandy
Instructions
- In a large pot, combine rabbit, duck fat, onion, garlic, thyme, pepper, salt, and bay leaves.
- Cover and cook over low heat for 3 to 4 hours until the rabbit is tender.
- Remove the rabbit and let it cool, then shred the meat and discard bones.
- Return the shredded meat to the pot, and add Cognac.
- Stir well and pack into jars, covering with a layer of melted fat.
Notes
- Can be stored in the refrigerator for up to two weeks.
- Pairs well with cornichons and fresh bread.
