Description

A rich and flavorful spread made from rabbit, perfect for pairing with crusty bread.


Ingredients

Scale
  • 1 rabbit cut into pieces
  • 2 cups duck fat
  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 bay leaves
  • 1 tablespoon Cognac or brandy


Instructions

  1. In a large pot, combine rabbit, duck fat, onion, garlic, thyme, pepper, salt, and bay leaves.
  2. Cover and cook over low heat for 3 to 4 hours until the rabbit is tender.
  3. Remove the rabbit and let it cool, then shred the meat and discard bones.
  4. Return the shredded meat to the pot, and add Cognac.
  5. Stir well and pack into jars, covering with a layer of melted fat.

  • Can be stored in the refrigerator for up to two weeks.
