Ingredients

  • 1 pound rabbit loin
  • 2 tablespoons tallow
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat tallow in a skillet over medium heat.
  3. Season rabbit loin with salt and black pepper, then sear in the skillet until golden brown.
  4. Transfer the skillet to the preheated oven and roast for about 15-20 minutes.
  5. Remove the loin and let it rest.
  6. In the same skillet, add garlic and thyme, cook until fragrant.
  7. Pour in the heavy cream and simmer until slightly thickened.
  8. Slice the rabbit loin and serve with the creamy tallow reduction.
