Description

A flavorful and comforting soup with spicy chicken meatballs inspired by Thai flavors.


Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped cilantro
  • 2 green onions, chopped
  • 1 tablespoon red curry paste
  • 1 egg
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 bell pepper, sliced
  • 1 carrot, sliced
  • 1 tablespoon fish sauce
  • 2 teaspoons lime juice
  • Salt to taste


Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, cilantro, green onions, curry paste, and egg. Mix well and form into meatballs.
  2. In a large pot, bring chicken broth to a boil.
  3. Add the meatballs and cook for about 10 minutes.
  4. Stir in coconut milk, bell pepper, carrot, fish sauce, and lime juice.
  5. Simmer for another 10 minutes until vegetables are tender.
  6. Season with salt to taste and serve hot.

Notes

  • For extra flavor, add lime wedges and additional cilantro as garnish.
  • Adjust the spiciness by adding more or less curry paste.
