A flavorful and comforting soup with spicy chicken meatballs inspired by Thai flavors.
Ingredients

- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup chopped cilantro
- 2 green onions, chopped
- 1 tablespoon red curry paste
- 1 egg
- 4 cups chicken broth
- 1 can coconut milk
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 tablespoon fish sauce
- 2 teaspoons lime juice
- Salt to taste
Instructions
- In a bowl, combine ground chicken, breadcrumbs, cilantro, green onions, curry paste, and egg. Mix well and form into meatballs.
- In a large pot, bring chicken broth to a boil.
- Add the meatballs and cook for about 10 minutes.
- Stir in coconut milk, bell pepper, carrot, fish sauce, and lime juice.
- Simmer for another 10 minutes until vegetables are tender.
- Season with salt to taste and serve hot.
Notes
- For extra flavor, add lime wedges and additional cilantro as garnish.
- Adjust the spiciness by adding more or less curry paste.
