- 2 pounds pork shoulder
- 1 tablespoon olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 orange, juiced
- 1 lime, juiced
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 teaspoon oregano
- 1 teaspoon paprika
- 4 cups cooked rice
- 1 cup black beans, rinsed
- 1 cup corn
- 1 avocado, diced
- 1 cup salsa
- 1/2 cup cilantro, chopped
Instructions
- Heat olive oil in a pot over medium-high heat.
- Season pork with salt and sear on all sides.
- Add onion and garlic, cook until fragrant.
- Pour in orange juice, lime juice, and spices.
- Cover and let cook on low for several hours until tender.
- Shred the pork and serve over rice with beans, corn, avocado, salsa, and cilantro.
