Delicious and flavorful pot carnita bowls, perfect for a hearty meal.


Ingredients

  • 2 pounds pork shoulder
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 orange, juiced
  • 1 lime, juiced
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 4 cups cooked rice
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1 avocado, diced
  • 1 cup salsa
  • 1/2 cup cilantro, chopped


Instructions

  1. Heat olive oil in a pot over medium-high heat.
  2. Season pork with salt and sear on all sides.
  3. Add onion and garlic, cook until fragrant.
  4. Pour in orange juice, lime juice, and spices.
  5. Cover and let cook on low for several hours until tender.
  6. Shred the pork and serve over rice with beans, corn, avocado, salsa, and cilantro.
