Description

A rich and flavorful broth that captures the essence of pork trotters, reduced to a silky glace.


Ingredients

Scale
  • 2 pounds pork trotters
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, crushed
  • 2 bay leaves
  • 10 black peppercorns
  • 1 teaspoon salt
  • 12 cups water


Instructions

  1. In a large pot, combine the pork trotters, onion, carrots, celery, garlic, bay leaves, peppercorns, salt, and water.
  2. Bring to a boil over medium-high heat.
  3. Reduce the heat to low and let simmer for 6-8 hours, skimming off any foam that rises to the surface.
  4. Remove the trotters and strain the broth through a fine-mesh sieve.
  5. Return the strained broth to the pot and continue to reduce over medium heat until thickened to a glace consistency.
  6. Allow to cool, then store in the refrigerator or freeze for later use.

Notes

  • For enhanced flavor, roast the vegetables before adding them to the pot.
  • Skim the fat from the surface before reducing for a cleaner taste.
