- 2 pounds pork trotters
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, crushed
- 2 bay leaves
- 10 black peppercorns
- 1 teaspoon salt
- 12 cups water
Instructions
- In a large pot, combine the pork trotters, onion, carrots, celery, garlic, bay leaves, peppercorns, salt, and water.
- Bring to a boil over medium-high heat.
- Reduce the heat to low and let simmer for 6-8 hours, skimming off any foam that rises to the surface.
- Remove the trotters and strain the broth through a fine-mesh sieve.
- Return the strained broth to the pot and continue to reduce over medium heat until thickened to a glace consistency.
- Allow to cool, then store in the refrigerator or freeze for later use.
Notes
- For enhanced flavor, roast the vegetables before adding them to the pot.
- Skim the fat from the surface before reducing for a cleaner taste.
