- 2 pounds pork ribs
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 8 cups chicken broth
- 1 can diced tomatoes (14 oz)
- 1 apple, peeled and diced
- 1 cup coconut milk
- salt to taste
- black pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the pork ribs and brown on all sides.
- Remove the ribs and set aside. In the same pot, add onion, carrots, celery, and garlic. Sauté until softened.
- Stir in the curry powder, cumin, and turmeric. Cook for 1 minute until fragrant.
- Add the chicken broth, diced tomatoes, and apple. Return the pork ribs to the pot.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the pork is tender.
- Stir in the coconut milk and season with salt and pepper. Simmer for an additional 10 minutes.
- Serve hot, garnished with fresh herbs if desired.

- Serve with rice or naan for a complete meal.
- This dish can be made a day in advance for better flavor.
