Description

A hearty and flavorful dish combining tender pork ribs with spices, vegetables, and a rich broth.


Ingredients

  • 2 pounds pork ribs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 8 cups chicken broth
  • 1 can diced tomatoes (14 oz)
  • 1 apple, peeled and diced
  • 1 cup coconut milk
  • salt to taste
  • black pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the pork ribs and brown on all sides.
  2. Remove the ribs and set aside. In the same pot, add onion, carrots, celery, and garlic. Sauté until softened.
  3. Stir in the curry powder, cumin, and turmeric. Cook for 1 minute until fragrant.
  4. Add the chicken broth, diced tomatoes, and apple. Return the pork ribs to the pot.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the pork is tender.
  6. Stir in the coconut milk and season with salt and pepper. Simmer for an additional 10 minutes.
  7. Serve hot, garnished with fresh herbs if desired.
