A flavorful Vietnamese noodle soup made with tender pork belly and aromatic spices.

- 1 pound pork belly
- 8 cups beef broth
- 1 onion, halved
- 1 piece ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 1 tablespoon fish sauce
- 8 ounces rice noodles
- 2 green onions, chopped
- 1 lime, cut into wedges
- 1 cup bean sprouts
- Fresh herbs (basil and cilantro)
Instructions
- In a large pot, add the pork belly and beef broth. Bring to a boil and skim off any foam.
- Add onion, ginger, star anise, cinnamon stick, and fish sauce. Simmer for 1 hour until pork is tender.
- Remove pork belly, slice thinly, and set aside.
- Cook rice noodles according to package instructions and divide into bowls.
- Strain the broth and pour over the noodles.
- Top with sliced pork belly, green onions, lime wedges, bean sprouts, and fresh herbs.
Notes
- For extra flavor, marinate pork belly in soy sauce before cooking.
