Description

A flavorful Vietnamese noodle soup made with tender pork belly and aromatic spices.


Ingredients

  • 1 pound pork belly
  • 8 cups beef broth
  • 1 onion, halved
  • 1 piece ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 1 tablespoon fish sauce
  • 8 ounces rice noodles
  • 2 green onions, chopped
  • 1 lime, cut into wedges
  • 1 cup bean sprouts
  • Fresh herbs (basil and cilantro)


Instructions

  1. In a large pot, add the pork belly and beef broth. Bring to a boil and skim off any foam.
  2. Add onion, ginger, star anise, cinnamon stick, and fish sauce. Simmer for 1 hour until pork is tender.
  3. Remove pork belly, slice thinly, and set aside.
  4. Cook rice noodles according to package instructions and divide into bowls.
  5. Strain the broth and pour over the noodles.
  6. Top with sliced pork belly, green onions, lime wedges, bean sprouts, and fresh herbs.

Notes

  • For extra flavor, marinate pork belly in soy sauce before cooking.
