These Pomegranate & Rosemary Lamb Skewers are a delicious and elegant dish, perfect for grilling season.
Ingredients

- 2 pounds lamb, cut into cubes
- 1 cup pomegranate juice
- 2 tablespoons fresh rosemary, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pomegranate, seeds removed for garnish
Instructions
- In a bowl, mix pomegranate juice, rosemary, garlic, olive oil, salt, and pepper.
- Add the lamb cubes and marinate for at least 1 hour, preferably overnight.
- Thread the marinated lamb onto skewers.
- Preheat a grill to medium-high heat.
- Grill the skewers for 8-10 minutes, turning occasionally, until cooked to your liking.
- Garnish with pomegranate seeds before serving.
Notes
- Soak skewers in water for 30 minutes if using wooden ones.
- Serve with a side of tzatziki for dipping.
