Description

A flavorful and elegant dish featuring a tender rack of lamb coated with a crust of crunchy pistachios.


Ingredients

  • 1 rack of lamb
  • 1 cup crushed pistachios
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix crushed pistachios, garlic, olive oil, rosemary, salt, and pepper.
  3. Season the rack of lamb with salt and pepper.
  4. Spread Dijon mustard over the lamb.
  5. Press the pistachio mixture onto the mustard-coated lamb.
  6. Place the lamb in a roasting pan and roast for about 25-30 minutes, or until desired doneness.
  7. Let it rest for 10 minutes before slicing and serving.
