- 1 rack of lamb
- 1 cup crushed pistachios
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced

- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix crushed pistachios, garlic, olive oil, rosemary, salt, and pepper.
- Season the rack of lamb with salt and pepper.
- Spread Dijon mustard over the lamb.
- Press the pistachio mixture onto the mustard-coated lamb.
- Place the lamb in a roasting pan and roast for about 25-30 minutes, or until desired doneness.
- Let it rest for 10 minutes before slicing and serving.
