A delicious stuffing roast made with pine nuts and suet, perfect for the holiday season.
Ingredients

- 1 cup pine nuts
- 2 cups stale bread, cubed
- 1 cup suet, finely chopped
- 1 onion, chopped
- 1 carrot, grated
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1 cup vegetable broth
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, sauté the onion and carrot until soft.
- In a large bowl, combine bread, suet, pine nuts, sautéed vegetables, thyme, salt, pepper, and parsley.
- Pour in the vegetable broth and mix until well combined.
- Transfer the mixture into a greased baking dish.
- Bake for 30-40 minutes or until the top is golden brown.
Notes
- For a vegetarian version, substitute suet with butter or olive oil.
- This stuffing can be prepared a day in advance and baked just before serving.
