- 1 pheasant
- 1 cup duck fat
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 sprigs fresh thyme
- 2 cloves garlic, minced
- 1 lemon, halved
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pheasant inside and out with salt and pepper.
- Place the thyme, garlic, and lemon inside the cavity of the pheasant.
- In a large oven-safe skillet, heat the duck fat over medium-high heat.
- Once hot, add the pheasant and sear it on all sides until browned.
- Transfer the skillet to the preheated oven and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Remove from the oven and let it rest for 10 minutes before carving.

- Serve with roasted vegetables or a side salad for a complete meal.
