Description

A rich and flavorful dish featuring succulent pheasant roasted to perfection in duck fat.


Ingredients

  • 1 pheasant
  • 1 cup duck fat
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 sprigs fresh thyme
  • 2 cloves garlic, minced
  • 1 lemon, halved


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pheasant inside and out with salt and pepper.
  3. Place the thyme, garlic, and lemon inside the cavity of the pheasant.
  4. In a large oven-safe skillet, heat the duck fat over medium-high heat.
  5. Once hot, add the pheasant and sear it on all sides until browned.
  6. Transfer the skillet to the preheated oven and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C).
  7. Remove from the oven and let it rest for 10 minutes before carving.
