Description
Persian Joojeh Kabab is a delicious and aromatic grilled chicken dish marinated in saffron and lemon juice, traditionally served at gatherings.

- 2 pounds boneless chicken thighs
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon saffron threads
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
Instructions
- In a bowl, combine the olive oil, lemon juice, saffron, garlic, salt, black pepper, and cumin to create the marinade.
- Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 4 hours or overnight.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the chicken skewers for 10-15 minutes, turning occasionally, until cooked through and slightly charred.
- Serve hot with rice and grilled vegetables.

- For best results, marinate the chicken overnight.
- Serve with flatbread and fresh herbs for a complete meal.
