Description

Persian Joojeh Kabab is a delicious and aromatic grilled chicken dish marinated in saffron and lemon juice, traditionally served at gatherings.


Ingredients

  • 2 pounds boneless chicken thighs
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon saffron threads
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin


Instructions

  1. In a bowl, combine the olive oil, lemon juice, saffron, garlic, salt, black pepper, and cumin to create the marinade.
  2. Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto skewers.
  5. Grill the chicken skewers for 10-15 minutes, turning occasionally, until cooked through and slightly charred.
  6. Serve hot with rice and grilled vegetables.
