Description

A rich and hearty oxtail soup with Indian-inspired flavors.


Ingredients

  • 2 pounds oxtail
  • 1 tablespoon curry powder
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 apple, peeled and diced
  • 1 tablespoon Worcestershire sauce
  • 4 cups beef broth
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish


Instructions

  1. In a large pot, brown the oxtail on all sides.
  2. Add the onion, garlic, carrot, celery, and apple. Cook until soft.
  3. Stir in the curry powder and Worcestershire sauce.
  4. Add the beef broth and bring to a boil.
  5. Reduce heat and simmer for 2-3 hours until the meat is tender.
  6. Stir in the coconut milk and season with salt.
  7. Serve hot, garnished with fresh cilantro.
