Ingredients

- 2 pounds oxtail
- 1 tablespoon curry powder
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 stalk celery, diced
- 1 apple, peeled and diced
- 1 tablespoon Worcestershire sauce
- 4 cups beef broth
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the oxtail on all sides.
- Add the onion, garlic, carrot, celery, and apple. Cook until soft.
- Stir in the curry powder and Worcestershire sauce.
- Add the beef broth and bring to a boil.
- Reduce heat and simmer for 2-3 hours until the meat is tender.
- Stir in the coconut milk and season with salt.
- Serve hot, garnished with fresh cilantro.

- For extra flavor, marinate the oxtail overnight in spices.
- Serve with rice or naan for a complete meal.
