- 3 pounds beef brisket
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 cups baby potatoes, halved
- 4 large carrots, peeled and cut into sticks
- 2 tablespoons harissa paste
- 2 tablespoons maple syrup
Instructions
- Preheat oven to 300°F (150°C).
- Season the brisket with salt and pepper, then heat olive oil in a large oven-safe pot over medium-high heat.
- Sear the brisket on both sides until browned, about 4-5 minutes per side.
- Add garlic and cook for an additional minute.
- Pour in beef broth and bring to a simmer.
- Cover and transfer to the oven. Bake for 3-4 hours or until tender.
- In the last 30 minutes, add the potatoes to the pot.
- In a separate bowl, mix harissa and maple syrup, then toss with carrot sticks.
- Spread carrots on a baking sheet and roast in the oven for 25-30 minutes until tender and caramelized.
- Remove the brisket from the oven, slice, and serve with roasted potatoes and carrots.
Notes
- For extra flavor, marinate the brisket overnight.
- Leftovers can be used in sandwiches or salads.
