Description

This festive Mistletoe Lamb Crown Roast is filled with a savory pork sausage stuffing, perfect for holiday gatherings.


Ingredients

  • 1 crown roast of lamb
  • 1 pound pork sausage
  • 1 cup breadcrumbs
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil
  • 1/2 cup dried cranberries (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions, celery, and garlic, sauté until softened.
  3. Add the pork sausage to the skillet, breaking it up with a spoon, and cook until browned.
  4. Stir in breadcrumbs, chicken broth, rosemary, salt, pepper, and cranberries. Mix well and remove from heat.
  5. Stuff the lamb crown roast with the sausage mixture.
  6. Place the roast in a roasting pan and season the outside with salt and pepper.
  7. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 145°F (63°C).
  8. Let the roast rest for 15 minutes before carving.
