- 1 crown roast of lamb
- 1 pound pork sausage
- 1 cup breadcrumbs
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chicken broth
- 1 tablespoon olive oil
- 1/2 cup dried cranberries (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add onions, celery, and garlic, sauté until softened.
- Add the pork sausage to the skillet, breaking it up with a spoon, and cook until browned.
- Stir in breadcrumbs, chicken broth, rosemary, salt, pepper, and cranberries. Mix well and remove from heat.
- Stuff the lamb crown roast with the sausage mixture.
- Place the roast in a roasting pan and season the outside with salt and pepper.
- Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 145°F (63°C).
- Let the roast rest for 15 minutes before carving.
