This Mediterranean Shrimp Orzo Skillet is a quick and delicious one-pan meal loaded with shrimp, orzo, and Mediterranean flavors.

- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and chopped
- 1/2 cup feta cheese, crumbled
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until onion is translucent.
- Add shrimp and cook until pink, about 2-3 minutes.
- Stir in orzo, chicken broth, tomatoes, olives, oregano, salt, black pepper, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer, stirring occasionally, until orzo is cooked, about 10-12 minutes.
- Remove from heat and stir in feta cheese and parsley.
- Serve warm and enjoy!

- For extra flavor, let the dish sit for a few minutes before serving to meld the ingredients together.
