Description

This Mediterranean Shrimp Orzo Skillet is a quick and delicious one-pan meal loaded with shrimp, orzo, and Mediterranean flavors.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/2 cup feta cheese, crumbled
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until onion is translucent.
  2. Add shrimp and cook until pink, about 2-3 minutes.
  3. Stir in orzo, chicken broth, tomatoes, olives, oregano, salt, black pepper, and red pepper flakes.
  4. Bring to a boil, then reduce heat and simmer, stirring occasionally, until orzo is cooked, about 10-12 minutes.
  5. Remove from heat and stir in feta cheese and parsley.
  6. Serve warm and enjoy!

Notes

  • For extra flavor, let the dish sit for a few minutes before serving to meld the ingredients together.
