- 2 pounds pork tenderloin
- 2 ripe mangoes, diced
- 1 cup coconut milk
- 2 cups jasmine rice
- 1 tablespoon red curry paste
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 stalks green onions, chopped
Instructions
- In a large skillet over medium heat, heat the vegetable oil.
- Season the pork tenderloin with salt and pepper, then sear in the skillet until browned on all sides.
- Add the red curry paste, fish sauce, brown sugar, and diced mangoes, cooking until the pork is cooked through.
- In a separate pot, combine the jasmine rice and coconut milk with 2 cups of water, bringing to a boil.
- Reduce heat and simmer until the rice is tender and the liquid is absorbed.
- Slice the pork and serve over the coconut rice, garnishing with chopped green onions.
Notes
- For a spicier version, add more red curry paste.
- Make sure to use ripe mangoes for the best flavor.
