Description

A delicious fusion dish combining sweet mangoes with tender pork and aromatic coconut rice.


Ingredients

  • 2 pounds pork tenderloin
  • 2 ripe mangoes, diced
  • 1 cup coconut milk
  • 2 cups jasmine rice
  • 1 tablespoon red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 stalks green onions, chopped


Instructions

  1. In a large skillet over medium heat, heat the vegetable oil.
  2. Season the pork tenderloin with salt and pepper, then sear in the skillet until browned on all sides.
  3. Add the red curry paste, fish sauce, brown sugar, and diced mangoes, cooking until the pork is cooked through.
  4. In a separate pot, combine the jasmine rice and coconut milk with 2 cups of water, bringing to a boil.
  5. Reduce heat and simmer until the rice is tender and the liquid is absorbed.
  6. Slice the pork and serve over the coconut rice, garnishing with chopped green onions.

Notes

  • For a spicier version, add more red curry paste.
  • Make sure to use ripe mangoes for the best flavor.
