Ingredients

- 2 pounds beef liver
- 1 large onion, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 10 cups water
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery; sauté until softened.
- Stir in garlic and cook for an additional minute.
- Add water, liver, thyme, salt, and pepper to the pot.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove liver, chop into bite-sized pieces, and stir back into the broth.
- Serve hot and enjoy the flavors.
Notes
- For a richer flavor, roast the liver before adding it to the broth.
