A hearty and nutritious chowder made with rich liver and flavorful lard.
Ingredients

- 1 pound beef liver
- 4 tablespoons lard
- 1 cup diced onions
- 2 cups diced potatoes
- 1 cup diced carrots
- 4 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large pot, melt the lard over medium heat.
- Add the diced onions and sauté until translucent.
- Stir in the diced potatoes and carrots, cooking for about 5 minutes.
- Add the beef liver and cook until browned on all sides.
- Pour in the beef broth, add salt and pepper, and bring to a boil.
- Reduce heat and simmer for 30 minutes, or until the vegetables are tender.
- Adjust seasoning as necessary before serving.
Notes
- This chowder is best served hot.
- Can be stored in the refrigerator for up to 3 days.
- Freeze for longer storage, but the texture of the liver may change.
