Description

A hearty and nutritious chowder made with rich liver and flavorful lard.


Ingredients

Scale
  • 1 pound beef liver
  • 4 tablespoons lard
  • 1 cup diced onions
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. In a large pot, melt the lard over medium heat.
  2. Add the diced onions and sauté until translucent.
  3. Stir in the diced potatoes and carrots, cooking for about 5 minutes.
  4. Add the beef liver and cook until browned on all sides.
  5. Pour in the beef broth, add salt and pepper, and bring to a boil.
  6. Reduce heat and simmer for 30 minutes, or until the vegetables are tender.
  7. Adjust seasoning as necessary before serving.

Notes

  • This chowder is best served hot.
  • Can be stored in the refrigerator for up to 3 days.
  • Freeze for longer storage, but the texture of the liver may change.
