Ingredients

- 1 pound salmon fillet
- 1/4 cup coarse sea salt
- 1/4 cup granulated sugar
- 1 tablespoon black peppercorns
- 1 tablespoon dill, chopped
- 1 lemon, zested
- 1 lemon, sliced
Instructions
- Combine salt, sugar, peppercorns, dill, and lemon zest in a bowl.
- Rub the mixture over the salmon fillet.
- Place lemon slices on top and wrap tightly in plastic wrap.
- Refrigerate for 48 hours, flipping the salmon halfway through.
- Once cured, slice thinly and serve.
