Description

Ingredients

  • 2 lamb loins
  • 1 tablespoon dried lavender
  • 2 teaspoons sea salt
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 sprig fresh rosemary


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the dried lavender, sea salt, olive oil, garlic, and black pepper to create a rub.
  3. Rub the mixture generously over the lamb loins.
  4. Heat a skillet over medium-high heat and sear the lamb loins on all sides until browned.
  5. Transfer the lamb to a roasting pan and add the rosemary sprig.
  6. Roast in the oven for 25-30 minutes until the internal temperature reaches 145°F (63°C) for medium-rare.
  7. Let the lamb rest for 10 minutes before slicing and serving.
