- 1 pound lamb sweetbreads
- 1 cup flour
- 2 eggs
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons olive oil
Instructions
- Soak the lamb sweetbreads in cold water for at least 2 hours, changing the water twice.
- Blanch them in boiling water for 5 minutes, then cool in ice water.
- Peel off the membranes and pat dry.
- Dredge the sweetbreads in flour, dip in beaten eggs, and coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat.
- Fry the sweetbreads until golden and crispy, about 4-5 minutes on each side.
- Drain on paper towels and serve hot.
Notes
- For added flavor, season the breadcrumbs with herbs.
- Sweetbreads can be served with a dipping sauce.
