Description

Deliciously crispy lamb sweetbreads, perfect for a gourmet meal.


Ingredients

  • 1 pound lamb sweetbreads
  • 1 cup flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil


Instructions

  1. Soak the lamb sweetbreads in cold water for at least 2 hours, changing the water twice.
  2. Blanch them in boiling water for 5 minutes, then cool in ice water.
  3. Peel off the membranes and pat dry.
  4. Dredge the sweetbreads in flour, dip in beaten eggs, and coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium heat.
  6. Fry the sweetbreads until golden and crispy, about 4-5 minutes on each side.
  7. Drain on paper towels and serve hot.

Notes

  • For added flavor, season the breadcrumbs with herbs.
  • Sweetbreads can be served with a dipping sauce.
