- 1 lamb shoulder
- 2 cups vegetable broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons rosemary
- 2 teaspoons thyme
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the slow cooker.
- Season the lamb shoulder with salt and pepper.
- In a skillet, heat olive oil and brown the lamb on all sides.
- Transfer the lamb to the slow cooker.
- Add the chopped onion, minced garlic, broth, rosemary, and thyme.
- Cover and cook on low for 6-8 hours until the lamb is tender.
- Shred the meat and serve.
