Description

A delicious lamb shoulder dish braised with bone marrow for a rich flavor.


Ingredients

Scale
  • 3 pounds lamb shoulder
  • 1 cup bone marrow
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 carrots, chopped
  • 2 celery stalks, chopped


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large oven-proof pot, heat some oil over medium heat.
  3. Season the lamb shoulder with salt and pepper and brown it on all sides.
  4. Add onions, garlic, carrots, and celery; sauté until soft.
  5. Add bone marrow and cook for a few minutes.
  6. Pour in the beef broth and add thyme.
  7. Bring to a simmer, cover, and transfer to the oven.
  8. Braise for 3-4 hours or until the meat is tender.
  9. Remove from the oven, and let rest before serving.

Notes

  • For a richer flavor, let the dish rest overnight in the fridge and reheat before serving.
  • This dish pairs well with a side of mashed potatoes or crusty bread.
