- 3 pounds lamb shoulder
- 1 cup bone marrow
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 tablespoon fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 carrots, chopped
- 2 celery stalks, chopped
Instructions
- Preheat the oven to 325°F (165°C).
- In a large oven-proof pot, heat some oil over medium heat.
- Season the lamb shoulder with salt and pepper and brown it on all sides.
- Add onions, garlic, carrots, and celery; sauté until soft.
- Add bone marrow and cook for a few minutes.
- Pour in the beef broth and add thyme.
- Bring to a simmer, cover, and transfer to the oven.
- Braise for 3-4 hours or until the meat is tender.
- Remove from the oven, and let rest before serving.
Notes
- For a richer flavor, let the dish rest overnight in the fridge and reheat before serving.
- This dish pairs well with a side of mashed potatoes or crusty bread.
