- 3 pounds lamb shoulder, bone-in
- 4 cups bone broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Heat the olive oil in a large Dutch oven over medium-high heat.
- Season the lamb shoulder with salt and black pepper, then sear it in the hot oil until browned on all sides.
- Remove the lamb and set aside. In the same pot, add the onion, garlic, carrots, and celery, sautéing until softened.
- Return the lamb to the pot, add bone broth, rosemary, and thyme.
- Bring to a simmer, cover, and transfer to the oven.
- Braise for approximately 3 hours, or until the lamb is tender.
- Remove the pot from the oven and let it rest for a few minutes before serving.
Notes
- This dish pairs well with mashed potatoes or crusty bread.
- Leftovers can be stored in the refrigerator for up to 3 days.
