Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine softened bone marrow, salt, pepper, rosemary, thyme, and garlic.
- Rub the mixture all over the lamb saddle roast.
- Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned.
- Transfer the seared roast to a roasting pan and roast in the preheated oven for about 1 hour or until the desired doneness is reached.
- Let the roast rest for 10 minutes before slicing and serving.
