Description

Deliciously tender lamb riblets that are slow-baked in tallow for maximum flavor and richness.


Ingredients

  • 2 pounds lamb riblets
  • 1 cup tallow
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large bowl, combine the salt, black pepper, garlic powder, onion powder, and smoked paprika.
  3. Rub the spice mixture all over the lamb riblets.
  4. In a large baking dish, arrange the riblets and pour the tallow over them, ensuring they are well-coated.
  5. Cover the dish tightly with foil and place it in the oven.
  6. Bake for 4 hours, then remove the foil and bake for an additional hour to crisp up the riblets.
  7. Let rest for 10 minutes before serving.
