Description
A rich and creamy lamb liver mousse topped with a buttery swirl.
Ingredients

- 500 grams lamb liver
- 150 grams unsalted butter, divided
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Melt 100 grams of butter in a skillet over medium heat. Add the onions and garlic, cooking until softened.
- Add the lamb liver and sauté until browned.
- Remove from heat and let cool slightly. Transfer the mixture to a food processor.
- Add eggs, thyme, salt, and pepper. Blend until smooth.
- Transfer the mixture to a buttered ramekin.
- In a small saucepan, melt the remaining butter and pour over the mousse.
- Bake for 40 minutes, or until set. Let cool before serving.
Notes
- Serve with toasted bread or crackers.
- Can be made a day ahead and stored in the refrigerator.
