Description

A rich and creamy lamb liver mousse topped with a buttery swirl.


Ingredients

Scale
  • 500 grams lamb liver
  • 150 grams unsalted butter, divided
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Melt 100 grams of butter in a skillet over medium heat. Add the onions and garlic, cooking until softened.
  3. Add the lamb liver and sauté until browned.
  4. Remove from heat and let cool slightly. Transfer the mixture to a food processor.
  5. Add eggs, thyme, salt, and pepper. Blend until smooth.
  6. Transfer the mixture to a buttered ramekin.
  7. In a small saucepan, melt the remaining butter and pour over the mousse.
  8. Bake for 40 minutes, or until set. Let cool before serving.

Notes

  • Serve with toasted bread or crackers.
  • Can be made a day ahead and stored in the refrigerator.
