Description

A rich and savory dish featuring tender lamb brain sautéed in nutty brown butter and accented with the sharpness of capers.


Ingredients

  • 1 lb lamb brain
  • 4 tbsp unsalted butter
  • 2 tbsp capers, rinsed
  • 1 tbsp lemon juice
  • Salt to taste
  • Black pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Prepare the lamb brain by soaking it in cold water for 30 minutes. Drain and set aside.
  2. In a skillet, melt the butter over medium heat until it becomes golden brown and starts to smell nutty.
  3. Add the lamb brain and cook for about 5-7 minutes until tender, stirring occasionally.
  4. Add the capers and lemon juice, cooking for another 2 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley.
