A refreshing and flavorful Laab Noodle Salad that’s perfect for any meal.
Ingredients

- 8 ounces rice noodles
- 1 pound ground chicken
- 1/4 cup lime juice
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1 red onion, thinly sliced
- 1 cucumber, thinly sliced
- 1 jalapeño pepper, thinly sliced
Instructions
- Cook the rice noodles according to package instructions, then drain and rinse under cold water.
- In a skillet, cook the ground chicken over medium heat until browned.
- In a large bowl, combine lime juice, fish sauce, and sugar.
- Add the cooked chicken, rice noodles, mint, cilantro, red onion, cucumber, and jalapeño to the bowl, then toss well to combine.
- Serve immediately, or chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to substitute ground chicken with tofu for a vegetarian option.
- Add more vegetables like bell peppers or carrots for extra crunch.
