Description

A refreshing and flavorful Laab Noodle Salad that’s perfect for any meal.


Ingredients

  • 8 ounces rice noodles
  • 1 pound ground chicken
  • 1/4 cup lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1 red onion, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 jalapeño pepper, thinly sliced


Instructions

  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water.
  2. In a skillet, cook the ground chicken over medium heat until browned.
  3. In a large bowl, combine lime juice, fish sauce, and sugar.
  4. Add the cooked chicken, rice noodles, mint, cilantro, red onion, cucumber, and jalapeño to the bowl, then toss well to combine.
  5. Serve immediately, or chill in the refrigerator for 30 minutes before serving.
