Korean Galbi-Jjim, or braised short ribs, is a tender and flavorful dish made with beef short ribs, vegetables, and a sweet and savory sauce.

- 2 pounds beef short ribs
- 1 cup soy sauce
- 1/2 cup sugar
- 1/4 cup sesame oil
- 1 onion, sliced
- 2 carrots, sliced
- 3 garlic cloves, minced
- 1 inch ginger, sliced
- 1 cup water
- 1 green onion, chopped
Instructions
- Soak the beef short ribs in cold water for about 30 minutes to remove excess blood.
- In a large pot, add the soaked ribs, soy sauce, sugar, sesame oil, onion, carrots, garlic, ginger, and water.
- Bring to a boil, then reduce to a simmer and cover. Cook for about 1.5 to 2 hours until the ribs are tender.
- Uncover and simmer for an additional 30 minutes to reduce the sauce.
- Serve hot, garnished with chopped green onion.
Notes
- For richer flavor, marinate the ribs in soy sauce and sugar overnight.
- Serve with steamed rice for a complete meal.
- Adjust the sweetness by modifying the sugar content to taste.
