Description

A delicious low-carb version of the classic Shepherd’s Pie, featuring a savory meat filling topped with creamy cauliflower mash.


Ingredients

  • 1 head cauliflower
  • 1 pound ground beef
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut cauliflower into florets and steam until soft.
  3. In a large skillet, brown the ground beef with onions and garlic.
  4. Add carrots, peas, tomato paste, beef broth, thyme, salt, and pepper. Cook until heated through.
  5. Transfer the meat mixture to a baking dish.
  6. Mash the steamed cauliflower with butter until creamy.
  7. Spread the cauliflower mash over the meat mixture.
  8. Bake for 25-30 minutes or until golden on top.

Notes

  • This dish can be made ahead and reheated.
  • For a spicier version, add chili flakes or hot sauce.
