A delicious low-carb version of the classic Shepherd’s Pie, featuring a savory meat filling topped with creamy cauliflower mash.

- 1 head cauliflower
- 1 pound ground beef
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup peas
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
Instructions
- Preheat oven to 400°F (200°C).
- Cut cauliflower into florets and steam until soft.
- In a large skillet, brown the ground beef with onions and garlic.
- Add carrots, peas, tomato paste, beef broth, thyme, salt, and pepper. Cook until heated through.
- Transfer the meat mixture to a baking dish.
- Mash the steamed cauliflower with butter until creamy.
- Spread the cauliflower mash over the meat mixture.
- Bake for 25-30 minutes or until golden on top.
Notes
- This dish can be made ahead and reheated.
- For a spicier version, add chili flakes or hot sauce.
