Description

A delicious low-carb breakfast dish featuring eggs poached in a spicy tomato sauce.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can (28 ounces) crushed tomatoes
  • 6 large eggs
  • salt to taste
  • black pepper to taste
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and red bell pepper; cook until softened.
  3. Stir in garlic, cumin, paprika, and cayenne; cook for 1 minute.
  4. Add crushed tomatoes, season with salt and pepper; simmer for 10 minutes.
  5. Create wells in the sauce, crack eggs into each well.
  6. Cover skillet and cook until egg whites are set.
  7. Garnish with parsley before serving.
