Ingredients

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 can (28 ounces) crushed tomatoes
- 6 large eggs
- salt to taste
- black pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and red bell pepper; cook until softened.
- Stir in garlic, cumin, paprika, and cayenne; cook for 1 minute.
- Add crushed tomatoes, season with salt and pepper; simmer for 10 minutes.
- Create wells in the sauce, crack eggs into each well.
- Cover skillet and cook until egg whites are set.
- Garnish with parsley before serving.
