Description

A rich and creamy Keto Meatball Stroganoff that is low in carbs and high in flavor.


Ingredients

  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1/4 cup almond flour
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 cup cauliflower rice, for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground beef, garlic powder, onion powder, salt, black pepper, egg, and almond flour. Form into meatballs.
  3. In a skillet, heat olive oil over medium heat. Add meatballs and cook until browned on all sides. Remove and set aside.
  4. Add onion and mushrooms to the skillet and cook until softened.
  5. Stir in beef broth, scraping up any browned bits. Return meatballs to the skillet.
  6. Add heavy cream, Worcestershire sauce, and Dijon mustard. Simmer until thickened.
  7. Serve over cauliflower rice.

Notes

  • For a creamier sauce, add more heavy cream.
  • Serve with steamed vegetables for a complete meal.
