Instructions
- Preheat the oven to 375°F (190°C).
- Flatten the chicken breasts to an even thickness.
- In a bowl, mix cream cheese, cranberries, pecans, thyme, garlic powder, salt, and pepper.
- Spread the mixture onto each chicken breast and roll them up tightly.
- Secure each roll with toothpicks if needed.
- Heat olive oil in a skillet over medium heat and brown the chicken rolls on all sides.
- Transfer the rolls to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
- Remove from the oven, let it rest, and serve.
